Méthode Cap Classique that means ‘to dance’

Saltare is a boutique Stellenbosch Cap Classique house whose Latin name means “to dance” (pronounced /saltarε/)—a brief for delicate clarity, natural liveliness and graceful movement in the glass. Winemaker Carla Pauw, inspired by Champagne, made her first Cap Classique in 2003 with friends hand-harvesting Chardonnay and Pinot Noir and basket-pressing (with music and dance) enough juice for a single barrel. The Saltare label formally began with the 2007 vintage; since 2010 Carla has dedicated herself fully to the project, with husband Christoff supporting logistics, tasting and admin while working at the Stellenbosch Institute for Advanced Study (STIAS).

This is not a large farm cellar door on a rural lane. Saltare operates a small tasting studio on Die Laan (The Avenue) on the banks of the Eersterivier in Stellenbosch’s historic heart—appointment-only meetings with Carla—while production sits at Lushof Cellar just outside town (earlier vintages were made at Stellenbosch University’s experimental cellar). Fruit is curated from roughly seven vineyards across the Western Cape rather than a single estate block.

Philosophy: slow bubbles, light touch

Saltare’s Cap Classique craft is deliberately slow. Grapes are pressed whole-bunch; only the cuvée (best) juice is kept for primary fermentation. Base wines may see a combination of barrel and steel for diversity of expression, with lees work and batonnage adding elegance and length. Secondary fermentation in bottle is followed by extended lees ageing—eighteen months to more than three years depending on cuvée—before disgorgement. Philosophy notes emphasise minimal impact and biodynamic-minded choices: gravity moves juice where possible, barrels integrate rather than dominate flavour, and wines are given time to develop roundness. The house seeks superior acidity and fine minerality above all.

Still wines remain a small but serious side of the project: old-vine Chenin Blanc and Swartland Syrah join the sparkling core, plus a limited-edition olive oil from Ida’s Valley trees.

Cap Classique and still wines to know

Sparkling (Méthode Cap Classique)

  • Saltare Brut Nature — zero dosage; Pinot Noir and Chardonnay; 18–24 months on lees; no added sugar (and house notes cite no added sulphur on this cuvée). Crisp rose, lavender, clove, green apple, strawberry; clean finish and exceptional length. Ideal aperitif. Chardonnay typically from limestone Robertson / Bonnievale Breede River sites; Pinot Noir from cool, sandy east-facing maritime Stellenbosch (e.g. Vlaeberg overlooking Simonsberg) with smaller Bonnievale batches.
  • Saltare Brut Rosé — 100% Pinot Noir, single-vineyard character; ~18 months on lees. Pale pink; raspberry, red berries, cherry; mineral red apple and pomegranate; fine sherbet-like mousse; strawberry and almond finish.
  • Saltare Brut Reserve — Pinot Noir–Chardonnay blend; ~36 months on lees; ~25% barrel-aged reserve wines for depth and consistency. Almond, camomile, honey, oyster shell, yellow apple; fine mousse and creamy length.
  • Saltare Blanc de Blancs — 100% Chardonnay; ~42 months on lees; next release windows have been flagged around 2026. Savoury lemon curd, ginger biscuit, camomile; crisp dry follow-through; fine persistent bubbles.
  • Saltare Blanc de Noirs Cuvée Camille — occasional small-batch 100% Pinot Noir; ~42 months on lees; exceptional vintages only (next release notes also around 2026). Lime blossom, cherry, strawberry jam; raspberry, rose, pomegranate, white peach; silky texture.

Still wines and more

  • Old Vines Chenin Blanc — irrigation-free vineyard planted 1971 on northern Paardeberg (Swartland) slopes. Orange blossom, tangerine, caramel; white peach and orange rind; velvet texture with bright acidity—food-friendly length.
  • Syrah — unirrigated single-vineyard Swartland fruit on Malmesbury soils. Mulberry, clove, aniseed, violet, cedar; cassis, allspice, white pepper; silky palate.
  • Extra Virgin Olive Oil — Frantoio, Leccino and Nocellara del Belice from ~15-year-old trees in Ida’s Valley, Stellenbosch; hand-harvested, milled, blended and naturally settled.

Visiting the Die Laan studio

Saltare invites visitors to make an appointment via saltare.online to meet Carla and taste Cap Classique and still wines. There are no published walk-in hours—this is a boutique studio experience in town, not a drive-through farm tasting room. Listed contacts from Stellenbosch Network / trade profiles: 30 Die Laan (The Avenue), Stellenbosch, 7600; +27 21 883 9568; info@saltare.co.za (confirm current booking channel on the official contact form). Price is not always publicly listed—ask when you book.

Use the studio as a town-centre sparkling interlude between Stellenbosch restaurants and museums, or as a focused MCC masterclass before heading to farm estates.

Stellenbosch itinerary fit

Saltare fits a Stellenbosch town day: book the studio mid-morning, taste Brut Nature through Reserve (and ask about Blanc de Blancs / Camille release status), then lunch on Church Street or Dorp Street. Pair with other Cap Classique specialists if you are building a sparkling-focused route, or contrast Saltare’s multi-site Western Cape fruit with single-estate MCC houses in the district. Collectors should enquire about Reserve and extended-lees cuvées; Champagne lovers will recognise the Brut Nature zero-dosage discipline.
